LUMBERJACK CAKE
English apples are plentiful and about to get more so. This is one of our favourite cakes and very popular with our customers. All the apples in it make it sticky and moist and the chewy top seals everything in as it cooks.
Soak Dates and 2 teaspoons of sodium bicarbonate in 11/2 cups boiling water for half an hour.
Grease and line an 8inch square cake tin with greaseproof paper
Put the following ingredients into a mixing bowl and whip for several minutes until light and fluffy.
- 175gms softened butter
- 250gms castor sugar
- 3 medium eggs
- Vanilla essence
Meanwhile:
Add 4 grated apples to the soaked dates.Fold in with the whisked butter, sugar and eggs. Add 2 cups of plain flour and fold in.
Pour into the lined baking tin
Bake for about 2 hours at 350F / 175C
While baking prepare the topping
Put the butter into a saucepan and add the milk and the dark brown muscodavo sugar. Melt over a low flame and add the grated coconut.
When the cake is almost cooked in the middle – check after about 11/2 hours- spread the mixture over the cake and cook for a further 20-30 minutes
