Eileen and Michael Jeffs have been developing Summersault as a vegetarian restaurant using real food and organic ingredients for 22 years. We have built our success on developing real food vegetable dishes that are favourites with vegetarians and meat eaters; we could not have succeeded by relying on vegetarian customers alone, we have to produce good tasty food that everyone will enjoy.

Eileen and Michael were both practicing teachers in former times and Eileen was for some time also officer in charge of adult education, training and development for Leicestershire County.
